Dinner at KITTE Osaka
To Kohaku Brasserie
By the time I got back from the Expo site, I was completely exhausted.

For dinner, I decided to go to Kohaku Brasserie, located inside KITTE Osaka, the commercial complex in the same building as the hotel.

It’s a new concept from Kohaku (Kohaku), the restaurant known for its French-style oden. Regular Kohaku focuses on small plates, but this brasserie serves more full-fledged French à la carte dishes.
I started with the “potato mousse wrapped in a crêpe with fresh cheese.”

My impression is that when restaurants become popular and expand to a certain extent, they often shift toward a style that prioritizes scale and efficiency.

Sorry if this sounds presumptuous coming from an outsider, but maybe people in Osaka are especially discerning when it comes to flavor, because the overall average quality of the city’s restaurants feels incredibly high…

Every dish looks like it takes real care, so I found myself wondering what kind of operation makes that possible at a place like this, which doesn’t exactly seem like it has a hotel-style chef brigade behind it.

That said, there is one slight drawback: if you think of it as food to nibble on with drinks, regular Kohaku is physically easier to eat.

It made me feel how difficult it is to aim for serious French à la carte while also staying close to the feel of a casual drinking spot, haha.
